| Ingredients: |
1 smoked ham hock
1/4 cup onion
2 10 oz. packages frozen black-eyed peas
1/2 cups uncooked white rice |
2 cups water
salt and pepper to taste
hot sauce optional |

Instructions: |

Cut up smoked ham hock and brown in large pot with onion. Add peas and rice, then water. Cover and simmer over very low heat for about 20 minutes, until the rice is tender. |

| Serve with greens (collard, mustard or turnip) and hot cornbread. |
