Ingredients:
1 smoked ham hock
1/4 cup onion
2 10 oz. packages frozen black-eyed peas
1/2 cups uncooked white rice
2 cups water
salt and pepper to taste
hot sauce optional
Cooking Instructions:
Cut up smoked ham hock and brown in large pot with onion. Add peas and rice, then water. Cover and simmer over very low heat for about 20 minutes, until the rice is tender.
Serving Suggestions:
Serve with greens (collard, mustard or turnip) and hot cornbread.
Additional Comments:
Black-eyed peas and pork signify good luck in the new year. Greens mean wealth.
